Mac & Cheese:
+ Macaroni
+ 1 leek (or 2 small)
To a blender add:
+ Can of unsweetened coconut cream (spoon all the cream on top & just a couple tb of the liquid on the bottom)
+ 1/2 cup cashews (soaked in warm water for 15-20 min)
+ 3-4 Tb nutritional yeast
+ 1/2 shallot
+ 1 Tb white miso paste
+ Juice of half a lemon
+ Pinch of Salt
Top with breadcrumbs & bake at 350F for 15-20 min.
Pesto Pasta:
+ Pasta of choice
+ 1 large broccoli crown
+ 1 cup frozen peas
To a food processor or blender add:
+ about 4 cups of fresh basil
+ 1/4 cup raw sunflower seeds
+ 4 cloves of garlic
+ 4 Tb nutritional yeast
+ 1/4 tsp salt
+ 3 Tb olive oil
+ Drizzle of water
+ Juice of 1 lemon
Red Lentil Tomato Sauce:
+ Large jar or can of tomato sauce
+ 1/4 cup red lentils
+ Small onion
+ 4 cloves of garlic
+ 1/4 tsp dried basil
+ 1 tsp dried parsley
+ 1 tsp dried oregano
+ salt / pepper
+ pasta of choice
+ optional: meatless meatballs like gardein
Chickpea Noodle Soup:
+ 3 stalks celery
+ 2 carrots
+ 1 small onion
+ 4 cloves garlic
+ 1 tsp thyme
+ 1 tsp parsley
+ salt / pepper
+ 1-2 boxes of veg broth (if using one sub the second half with water)
+ 1-2 cans/boxes of chick peas
+ noodles of choice
